SOUTH African born Bruce Cheyne has worked for some of the best Chefs in the country and is now taking his experience and craft to the next level with luxury event florist wife Kamie Cheyne.
Bruce’s passion for food started at a young age in South Africa. Home cooking and dining out were a huge part of his family upbringing.
Over the years his passion for food continued to grow, which led him to attend Christina Martin, one of the most prestigious culinary schools in South Africa.
From there he worked in many prestigious restaurants including being a part of the team at the world renowned The Oyster Box Hotel in Durban.
In 2010 Bruce moved to the UK to work for Jean-Christophe Novelli at The White Horse.
He then trained with Tom Aikens, Lee Westcott and Alexander Claridge and headed up the pastry department in Michelin and multi-rosette restaurants as well as working in developmental kitchens.
After meeting Kamie in London in 2013, they moved back to Kamie’s home county of the West Midlands and he worked with Stu Deeley at The Wilderness and Liam Dillon at The Boat Inn.
Kamie’s background in film set dressing and floristry career in London has led her to work on some well recognised design projects, from intimate to large scale events.
Merged with her luxury event floral company in Alvechurch, brings a distinct style of luxury minimalism, inspired by seasonal changes and nature for KOS.
Kamie uses a mix of seasonal and locally grown British flowers to compliment Bruce’s vision of the dishes. She believes that flowers have the power to transform any space adding natural beauty, colour and fragrance to the environment.
The menus that they produce for the evening will be printed on seeded paper as homage to their engagement love story and allow guests to take home a piece of nature.
Kamie and Bruce are passionate to include their two young daughters in their food and floral fusion.
Whilst demonstrating a strong work ethic, they hope to inspire their children and to teach them the value of hard work, the importance of spending time in nature and the joy of cooking something from scratch, all whilst creating beautiful childhood memories.
KOS Dining Menu Concept & Kitchen Takeover at Old Rectory House
The KOS dining menu concept is simple, to cook tasty food in a relaxed dining experience.
Bruce’s interest in floral and botanical pairings started whilst working for Tom Aikens, who introduced him to the world of foraging with nature’s bounty. This has evolved over the years and now, alongside Kamie they have a joint appreciation of nature, which makes KOS dining what it is today.
The evening will take place in the stunning Victorian Style Orangery at Old Rectory House, a Grade II listed, former Rectory with a wealth of historical connections.
The Orangery is flooded with natural light from the stunning glass roof lantern and overlooks the private landscaped gardens surrounding the venue.
Bruce said: “We are incredibly excited for the KOS Dining kitchen takeover at Old Rectory House. We are passionate about collaborating with local businesses, supporting our local community, and have found a hidden gem with the venue, that aligns perfectly with our vision for KOS.
We are looking forward to offering an unforgettable dining experience bringing together our love of food, nature and family.”
The 6-course menu will feature dishes such as IPA Sourdough and truffle marmite butter, aged beef, potato gratin, Jerusalem artichoke, cabbage with a bone marrow sauce and a dessert of Honey, Fig leaf, yoghurt and Blueberry.
Old Rectory House drinks development team have matched wines for the dishes and created three floral inspired cocktails to complement the menu which feature damsons, apples, figs and botanicals which have all been foraged from the grounds of the House.
The KOS Dining takeover is happening on Friday 10th November, first tables can be booked for 7pm arrival
